Apricot and Coconut Muesli Bars
(Dairy free)
Ingredients
1 cup rolled oats 1 cup coconut, desiccated ½ wheat germ ½ cup sesame seeds ½ cup sunflower seeds ½ cup pepitas ½ cup linseed meal 1 cup dried apricots, organic (any dried fruit will do) 1 cup coconut oil 1 cup honey or rice syrup 1 cup tahini, hulled Method Grease and line a 30cm square oven dish. In a large pan, toast the first 6 ingredients until golden. Transfer to a bowl and allow to cool. Add the linseed meal. Place the mixture in a processor and with the motor on, pour in the coconut oil, rice syrup and tahini. Process quickly only until mixture is combined. Using the back of a spoon press the mixture into the pan. Cut into squares or bars before you cook them. Put the tray into the oven at 180C for 10 minutes or until they start to brown up. |
