Date Logs
(Gluten free)
Ingredients
230 gms pitted dates 80gms butter (can add coconut oil instead so it's Dairy free) 2 cups puffed rice, quinoa or buckwheat (your choice) 1 tblspoon xyiltol (or other sweetner) Method Put dates, butter, & xylitol into a saucepan with a bit of water on low heat. Allow butter to melt, stirring occasionally. Simmer for 5-10 mins. Turn off & allow to cool. Place in food processor & whiz till well combined. Slowly add puffed grains (you may not need 2 cups) until mixture is stiff. Place in fridge to cool. Once cooled roll into little bite sized logs. Makes about 15 logs. |
