Oaty Dried Apricot Biscuits
Ingredients
55g dried apricot 130g white SPELT flour 60 true arrowroot 100g oatmeal (or put rolled oats in blender for a minute and use those) 45g desiccated coconut 1/4 tsp baking powder 125g unsalted butter 80ml maple syrup 80ml rice syrup 1 tsp natural vanilla extract Method Place apricot and 80ml water in a saucpan and bring to the boil then take off heat and sit for 1min with lid on. Place spelt flour, arrowroot, oatmeal, cocnut, and baking powder in a bowl and mix together well. Put butter and maple and rice syrup in food processer and mix till combined into a smooth paste consistency. Add apricot mixture and blend again. Add to dry ingredients and mix together. Place in fridge to chill for 10-15min. Take out and use tsp size amounts to roll into balls and press to flatten with a fork. Cook for 10-15min in moderate oven. |
