Potato Salad
Ingredients
3-4 peeled medium/large potatoes 200g jar of pickled gherkins - sliced 1 grated carrot 1 tablespoon of dijon mustard 1 tablespoon of wholegrain mustard 1/2 cup mayonaise Method Peeled and cut the potatoes into cubes and boil until soft. Once cooled, add the sliced gherkins followed by the remaining mixture and mix well. Serve cold as a meal or as a side. You could add other ingredients like boiled eggs, peas or corn. |
