Pumpkin, Caramelised Onion, Spinach & Feta Pie
Ingredients
1/2 pumpkin, cut into pieces and roasted until soft and mushy 3 red onions, sliced and caramelised 2 eggs, beaten 200-300g sauteed spinach 200-300g Greek or Danish Feta Puff or short crust pastry 2 tablespoons of chopped rosemary 2 tablespoons of chopped parsley 2 tablespoons of chopped mint Salt and Pepper Method Preheat oven to 180 degrees. Mash the pumpkin and put aside In a bowl, mix the egg, spinach, parsley, mint and feta and put aside. Grease a deep baking dish or tin. Spread the mashed pumpkin on the bottom of the dish, add some salt and pepper, followed by the caramelised onion and rosemary. Add the spinach mixture on top. Add your chosen pastry over the top and brush lightly with some olive oil. Bake until pastry rises and is golden, appox. 1 hour. |
