Zucchini & Chickpea Slice
I love combining this with roast vegies on the side like potato, pumpkin & beetroot. Throw everything in the oven and about 1hr later, dinner is ready.
Ingredients 2 medium zucchini, grated Spices: 1tsp mustard, a few shakes of cumin, tumeric, white pepper 1 brown onion, diced 2 cloves of garlic, diced (or 1Tablespoon of minced garlic) 2 eggs or 3 eggs (depends on how big you want the slice to rise) 1/2 cup oil 1 cup of (ready to use) chickpeas (NB: you'll need to pre-soak dried chickpeas overnight or if you use canned chickpeas, then just rinse them really well a couple of times) 1 cup Self-raising flour Method Preheat oven to 200 degrees. Spray or grease your baking dish, I use a square pyrex dish, as it makes it easier to cut in the dish once it's baked. Mix together the zucchini and spices, tastes really good if you let it sit for about 10mins at least. Saute the onion and garlic. Add to zucchini mix. Add eggs, oil and chickpeas. Mix thoroughly. Add flour and stir to combine. Pour into dish and bake for 30-40mins. Cut into portion sizes for a meal, or cut them into "sausages" as finger food for the kids or cut them into cubes and serve with hommus or guacamole. An interesting variation I sometimes do is about 20min into baking, I'll pull the dish out of the oven and squeeze BBQ sauce over the top and bake again for the last 10 or 15mins. Sounds strange but it tastes good. |
